San Martin Restaurant

With its view and a cozy and warm atmosphere, the San Martin Restaurant is certainly the heart of the entire hotel. It is a spot for socializing and friendly chatting as well as for discovering the Brda gastronomic offer, while drinking a glass of good wine.

The restaurant cuisine is based on the local and fresh ingredients. In fact, vegetables and herbs grow on the garden, located right below the hotel. Next to the garden, there is a plantation of 150 olive trees. These have been planted with an environment-friendly biodynamic method. Bogdan and Vesna are aware of the importance of fresh and organic ingredients and, therefore, they try to produce as many as possible of them on their own or they look for high-quality domestic products at the nearest farms. Fresh and tender meat by the local butcher, fruit by the local farmer or fresh-caught fish by reliable fishermen.

Our dishes

San Martin Restaurant offers fresh a la Carte dishes, focusing on seasonal ingredients. In the kitchen, the most attention is paid to the selection of high-quality local ingredients, which are mainly seasonal. In the spring, for example, when wild garlic grows, wild garlic soup or risotto with wild herbs and asparagus are prepared. Of course, the offer also includes dishes, which are freshly prepared throughout the whole year. For example, homemade ravioli with scallops, goat cheese sauce and parsley oil or rice with smoked trout, asparagus and nettle, as well as rabbit and beef variations. Especially delicious are the desserts made of domestic seasonal fruit, which is abundant in Goriška Brda hills. With their full pallets of tastes, they serve as a real inspiration for desserts as chocolate Namelaka and Lava cake.

Chefs

Valerio Lutman has transformed his love of cooking and good food into a career, lasting for already 15 years. Besides cooking, he enjoys making desserts. His openness and persistence brought him a victory in the show The Inn is Looking for the Chef. In his free time, he likes riding a bike and he can boast with the title of the national champion in mountain baking.

Since he was young, Denis Ferizovič has been enjoying cooking. He is an athlete, full of energy, aware of the importance of healthy and high-quality food. He likes new challenges, while as a chef he is known for his creative and unburdened approach towards food and ingredients. He gained experience through training in a restaurant in Switzerland and Slovenia, and he has also taken part at domestic and foreign culinary competitions, where he has achieved excellent results.
